Now that summer is officially here and the days are really heating up, we wanted to try a cooler option for our coffee intake. Here is a recipe for a healthy coffee smoothie that was delish! It uses dates as an alternative to sugar for sweetness. I've been wanting to try using dates for a sugar substitute in my baking (I'll let you know how it turns out whenever I get around to baking something!). I can say that it worked brilliantly in this smoothie anyway!
~Creamy Date Coffee Smoothie~
1 Banana (fresh or frozen)
3 Medjool dates
1 cup unsweetened almond milk
1/2 cup rolled oats
1/2 tsp vanilla extract
1 Tbsp chia seeds
1 large handful of ice
1 cup black coffee (you can use cold brew or just brewed coffee that has cooled in the fridge)
Combine all ingredients in a blender and blend until smooth. I had to shake it and blend a few times to get the dates mixed in well. Makes 4 cups. We used decaf brewed coffee and enjoyed this smoothie as an afternoon refresher along with a spirited game of chess!
